Spicy Paprika Chicken with Loaded Mini Potatoes

Ingredients

Chicken:

  • 300g Boneless Skinless Chicken Breasts
  • 1 tbsp olive oil 
  • 1½ tsp smoked paprika
  • ½ tsp garlic powder 
  • ½ tsp onion powder 
  • ½ tsp chili flakes (adjust on how spicy you want)
  • ½ tsp salt 
  • ¼  tsp black pepper 

Potatoes: 

•     400g mini potatoes

•     1 tbsp olive oil

•     1 tsp smoked paprika 

•     ½ tsp salt 

•     ¼ tsp black pepper

Instructions

Preheat your oven to 220°C (425°F). 

Wash and dry potatoes, and cut in halves 

Toss the potatoes with olive oil paprika, salt and pepper

Spread on tray (don't make it crowded)

Roast for 25-30 minutes until crispy and golden

Toss chicken with olive oil and all spices listed 

Heat pan over medium - high heat 

Cook the chicken for 6-8 minutes while turning occasionally 

Cook until browned and fully cooked inside

Lightly smash the roasted potatoes with a fork 

Top with cooked chicken 

add desired amount of cheese over top (optional)

Put tray back in oven for 3-5 minutes or broil for 2-3 minutes
